Pico Lime Chicken

Hey y’all! If you follow me on Pinterest or know me personally, you know that I LOVE to cook! I managed a restaurant for nearly 12 years, so maybe that’s where it comes from, because before then, I could barely even boil water lol Anyway, I saw this Pico Lime Chicken on Pinterest last week and knew I had to give it a try, and I am sooooo glad I did!

I started with a pre-made fresh pico I found at Wal-Mart in the produce section (I cheated, I know) and then added extra onions (I love onion!), diced jalapeno, lime juice and fresh parsley.

I spared you the pics of the raw chicken breast because who really wants to look at raw meat? But above are the seasonings I used.

I coated a large Pyrex casserole dish in Olive Oil and then added my 4 boneless, skinless chicken breast, turning them several times to make sure the were fully coated as well, and then added more Olive Oil for good measure. I then sprinkled Crazy Mixed Up Salt, Crazy Mixed Up Pepper, and a DIY blend I add to everything (1/4 onion powder, 1/4 garlic powder, 1/4 salt and 1/4 pepper that I keep pre-mixed in an old seasoning shaker) on both sides of the meat.

Place in oven on 350 and cook for about 15-20 minutes, then flip the chicken breasts over, add a little lime juice down the middle of each piece and cook for another 15-20 minutes. Remove and add cheese slices (I used 2 slices each, overlapping one another) and bake another 3-5 minutes, or until cheese is fully melted and internal temperature reaches 165. Remove from heat and add pico and your done!

Now for some good ‘ole Southern Mashed Potatoes…

I started with 4 small-medium sized potatoes, cut them up and added them to boiling water. Then I add about 4 HEAPING spoonfuls of butter and a VERY generous amount of Tony’s Creole Seasoning to the water. Once your potatoes are done, remove them from the heat but leave them soaking in the water. This allows them to really soak in the flavor. Plus, mashed potatoes cool so quickly this is a good way to finish making your meal before finishing them.

When you’re ready to finish, mash them, add A LOT more butter (I use about 4-5 large spoonfuls. Don’t judge.), sprinkle thoroughly but cautiously with garlic salt (taste as you go because too much can ruin them), and about 2 spoonfuls of sour cream or heavy cream. Both are great, but I do prefer the heavy cream but didn’t have any on hand. Mix well and you’re done!

For my last side I chose fresh French Beans.

Place in skillet on the lowest heat, toss in Olive Oil, crazy mixed up salt and sprinkle with the DIY blend I told you about earlier. Make sure they’re coated well. Cover and saute, flipping them around occasionally. This is super simple. Cook time is about 20 minutes, give or take how soft you prefer them.
